Banana Bread

I don't know why it seems that people only make banana bread when they have bananas that they need to use up before they go bad. It's so good! But I am guilty, just like the rest, and had several to use up last night. So I gave my first attempt at banana bread a try.

I used this recipe from allrecipes.com.

INGREDIENTS:
1/2 cup margarine, softened
3/4 cup white sugar
1/4 cup brown sugar
2 eggs
1 1/2 cups mashed banana
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon vanilla
1 teaspoon cinnamon
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x5 inch pan.
2. Cream margarine and sugar until smooth. Beat in eggs, then bananas. Add flour and soda, stirring just until combined.
3. Pour into prepared pan and bake at 350 degrees F (175 degrees C) for about 1 hour (or till toothpick comes out clean). Remove from pan and let cool, store in refrigerator or freeze.

My additions are in purple.

I was stuffed from dinner at my grandmother's for Easter yesterday, so I did not sample it until this morning- I'm pretty pleased. It's a lot denser than I would have liked, and I'm not really sure how to fix that but... I'll figure it out!
